Dr. Pei-Min Chao graduated from the Department of Agricultural Chemistry, National Taiwan University in 1987 and obtained both of her MS degree (1991) and PhD degree (2002) in Nutritional Biochemistry, National Taiwan University. She started her faculty position in Department of Nutrition, China Medical University from 1991 to present day. It was there she received outstanding teaching awards for recognition of her teaching skill. In 2007, driven by her research interests in obesity and metabolic syndrome, she embarked on, a one-year post-doctoral training at Pennington Biomedical Research Center (PBRC), Baton Rouge, LA, USA. In PBRC, she worked with Dr. Leslie Kozak and participated in their research in the areas of molecular mechanisms in determining susceptibility to obesity. Dr. Chao has published papers in Journal of Nutrition, British Journal of Nutrition, Nutrition, Metabolism, Journal of Agricultural and Food Chemistry, FASEB J, Plos One…etc. And, in 2010, she was promoted from associate professor to professor. Currently, Dr. Pei-Min Chao’s research focuses on 3 areas: (1) The development of functional foods with potential in treating metabolic syndrome. (2) The anti-obesity effect of bitter melon seed oil. (3) The modulations of glucose and lipid metabolism associated with dietary oxidized frying oil consumption.
